OLD-FASHIONED
BUTTERY PEANUT BRITTLE
Ingredients:
- 1 cup sugar
- ½ cup light corn
syrup
- 1 heaping cup
roasted peanuts (also try cashews, pecans, or
mixed nuts for a very impressive look and taste)
- 1 teaspoon butter
- 1 teaspoon vanilla
- 1 teaspoon baking
soda
Instructions:
Tape parchment paper to
counter top (about 2 ft.)
In 1 ½-qt. Casserole
bowl stir together sugar and corn syrup. Microwave at high 4
minutes. Stir in peanuts. Microwave at high 3 minutes. Add butter
and vanilla to syrup. Stir until well mixed. (NOTE:
peanuts will be lightly browned and the syrup very hot). Microwave on high for 2
minutes. Add baking soda and gently stir until light and foamy.
Pour mixture onto
parchment paper and spread thin. Let cool and then break into
very large pieces.
Personal Use:
Put into zip-lock bags or other plastic wrap.
Resale:
Put into shrink wrap paper and shrink. Now put a stickypick on
back and use the peanut brittle as a backdrop in all your
baskets.
